With summer right around the corner, we are always searching for Challenge Friendly treats to get us through. Briar and I have been testing out different recipes, to make homemade popsicles with and you guessed it, the Pina Colada Green Smoothie was the winner. I am in love with this smoothie. It is a true detox recipe loaded with spinach or kale depending on your likes, but the flavour of the coconut and pineapple together is such a winner.
I’ve tested a few different popsicle molds, you can pick them up in most home stores but the ones I am currently using I bought on Amazon. Regardless, any mold works, you can even use a cube tray! If you are not a fan of green smoothies (start to like them lol) just kidding you can try any smoothie. I just love green smoothies the most because you get more nutritional bang for your buck. Pina Colada Smoothie
serves 2
Ingredients
- 2 cup fresh spinach
- 3 cup pineapple, frozen
- 1 cup water
- 1 cup coconut milk (from the can)
- 2 tbsp coconut flakes unsweetened
- 1 tbsp chia seeds
Method
Blend spinach, coconut milk, water and coconut flakes, until smooth. Next, add the pineapple and blend again. Then add to the mold, freeze for roughly 5-6 hours and there you have it! The greatest summertime treat that will keep you totally Challenge Friendly!
