Did someone say fudge? lol Darn, right I did. Freezer fudge is quickly becoming a Challenge Friendly favourite, because not only does it taste amazing, it’s so darn easy with just a couple ingredients. If you start with coconut oil, almond butter and a little date butter I use that as my base. Then add whatever flavours you like.
Mint, pumpkin, coconut, nuts, seeds, vanilla, cocoa really the list is endless. Make sure you store in the freezer as they will soften in the fridge, plus that helps to keep your portion controlled. lol Let me tell you it isn’t hard at all to finish a full batch in one day! ?

Mint Chocolate Walnut Fudge
makes 8-10 squares, 2 per serving
Ingredients
- 1/4 cup melted coconut oil
- 1/4 cup almond butter
- 1 tbsp cocoa powder
- 1 tbsp date butter (more or less depending on how sweet you like it)
- 1/4 cup walnuts, chopped (optional)
- 1/4 tsp peppermint extract (more or less depending on how minty you like it)
Method
Melt coconut oil and whisk with all ingredients. If it gets too thick, pop into the microwave for a few seconds to keep the oil thin.
Line small loaf pan with parchment paper or wax paper. Pour in fudge and place in freezer to harden about 1 hour. Cut into 8-10 squares, and store in the freezer as they will be soft.
