What a refreshing change to protein balls.
Sometimes I find I need a change from the typical nut ball, something that has a punch of flavour without cocoa. For all our chocolate lovers out there, don’t worry – look for the Chocolate Chia Pudding to satisfy your chocolate fix. But back to the Lemon Cookie Dough Bites, these are super delicious and take just a couple minutes to whip up a batch.
If you want to increase the protein content, make sure to add the hemp seed hearts. You won’t even know they are in there. Now if you wanted to really kick these up a notch you could also add some chia (ground or whole) to load up the fiber content.
These will keep in the fridge for weeks, but if you wanted to freeze they would last months. Yeah right who are we kidding I have a feeling they won’t last the week in my house, they are that good.

Lemon-Coconut Cookie Dough Bites
Makes roughly 12 bites (2-3 per serving)
Ingredients
- 1 cup rolled oats
- 1 cup raw cashews
- 10 medjool dates pitted (or 15 regular pitted dates)
- 1 tsp vanilla bean or extract
- 2 tsp lemon zest
- ¼ cup + 1 Tablespoon water
- 2 tsp lemon juice
- ¼ cup hemp seed hearts (optional)
- ¼ cup shredded coconut, extra for rolling
Method
In the food processor, grind up the cashews, oats, hemp seed hearts and coconut into a coarse meal. Add the dates, lemon zest, vanilla and water until a dough starts to form. Roll into balls and stick in the fridge for 30 minutes to set. Enjoy!
