If you don’t have time to make the quinoa salad, no problem! Steam some veggies and you are good to go.

Lemon Baked Salmon with Fresh Quinoa Salad
serves 4
Ingredients
- 4 salmon fillets, frozen
- 1 lemon, juiced
- ¼ tsp red pepper flakes
- 2 tsp sesame seeds
- sea salt and pepper, to taste
Method
Preheat oven to 450°F. Line baking sheet with parchment paper and place frozen salmon side by side. Sprinkle with red pepper flakes, sesame seeds, sea salt and pepper. Pour over lemon juice and place the remaining lemon peel right on top.
Cover with foil or oven safe lid and bake roughly 25-30 mins until flakey. Serve with veggies or quinoa salad below. (recipe below)
Fresh Quinoa Salad
serves 6
Ingredients
- ¾ cups dried quinoa
- 1 ½ cup water
- 2 cups cucumbers, chopped
- 1 cup red pepper, chopped
- 1 cup yellow pepper, chopped
- 1 cup chickpeas, (optional)
- ½ cup feta, crumbled
- 1/3 cup sunflower seeds
- 3 tablespoons cilantro, minced
- 1/3 cup fresh lemon juice, (about 1-2 lemons)
- ¼ cup olive oil
- 1 teaspoon garlic, minced
- ½ teaspoon sea salt
Method
Bring water and quinoa to a boil cover and simmer about 15 mins, until liquid is absorbed. Remove lid and fluff with a fork. Place in refrigerator to cool. Place cucumbers, peppers, chickpeas, feta, sunflower seeds and cilantro in a salad bowl. Mix dressing in separate bowl. Whisk lemon juice, olive oil garlic and sea salt.
Pour over veggie mixture and add cooled quinoa. Let sit for 10-15 mins before serving. Enjoy.
