I know Challenge Friendly dessert can be tough. There aren’t many options in the grocery store, so I created a quick, easy dessert pizza that is a total hit. One trick that I do every week is adding a few cans of coconut milk in my fridge, I use these as a thicker icing or fruit dip.
This Watermelon Dessert Pizza is perfect for those summer nights. Add whatever toppings you have on hand, I love thinly sliced kiwi, berries, coconut, nuts etc. I hope you love it, let me know.

Watermelon Dessert Pizza
serves 4-6
Ingredients
- 1 watermelon, round slice
- 1/2 cup coconut frosting (see coconut whip cream below)
- raspberries, handful
- blueberries, handful
- 6 fresh mint leaves
- 2 tbsp coconut, unsweetened, shredded (optional)
Method
Cut watermelon into a round slice, you can do multiple pizzas with whatever fruit you prefer!
Top with coconut whip cream and fruit of choice, sprinkle with mint and shredded coconut
Coconut Whip Cream
Ingredients
- 1 can coconut milk
- 1 tbsp vanilla extract
- 1 tsp date or apple butter
Method
Put can of coconut milk in the refrigerator overnight to separate the coconut cream from the oil. Open can and scrape only the thick coconut cream from the top half of the can.
Place in your food processor (or use a hand-held mixer). Whip until it is the consistency of whip cream. Stop occasionally to scrape down the sides. Add vanilla or other flavour options if you want to change it up.
